Brown rice is incredibly nutritious, it is considered a whole grain because it contains the hull, bran, and germ whereas white rice does not. Brown rice is metabolized more slowly than white rice and is full of vitamins and minerals. To prepare the rice heat 2 tablespoons of olive oil over medium-high heat. Add the onion and sauté for 3 minutes until tender. Then, Add the garlic and brown rice and stirring frequently for one minute.
Add the rice mix, and the rest of the ingredients to a rice cooker and cook on the brown rice setting. Mine took about 35 minutes.
When it is finished, unplug the rice cooker, fluff the rice and set aside.
Lemony Brown Rice
- 2 cups chicken stock
- 1 cup brown rice
- 3 tbsp lemon juice
- zest of one lemon
- 1 tbsp olive oil
- 1 yellow onion
- 3 cloves garlic minced
- 1. To prepare the rice heat 2 tablespoons of olive oil over medium-high heat. Add the onion and saute for 3 minutes until tender. 2. Add the garlic and brown rice and stirring frequently for one minute. 3. Add the rice mix to a rice cooker with along with the chicken stock, lemon zest, and 3 tablespoons of lemon juice. 4. Turn on the brown rice setting and cook. When it is finished fluff and set aside.
